Levain Bakery Chocolate Chip Cookie

So you look at the picture on the Modern Honey website and you instantly crave chocolate chip cookies, especially this one. I’ve never been to New York or the Levain Bakery, but I can tell you that these cookies are well worth it! The massive cookie is warm, gooey and a little bit crispy on the edges. SO GOOD it’ll make you wanting more even though you’re stuffed from one cookie!

I would say this recipe is pretty foolproof, except that I added about a tablespoon of vanilla to the mix. For my cookies, they were really underdone, like straight dough in the middle. When I left it out overnight, it did create a nice cookie (which I loved TBH), but you can still tell that it was originally undercooked. So, I would recommend refrigerating the cookies for about an hour and then cooking them on 425 F for around 15 -20 minutes. This will ensure the cookie is still a little gooey, but still cooked through.

French Onion Pork Loin

For starters, I completely forgot to top the loin with some of the onions a cheese.. but oh well, it happens! It’s is all about the trial and error baby. Even though I forgot the toppings, this pork loin was one of my favorite recipes! TBH I could just eat the onions by themselves because they were THAT good! I would highly recommend this to someone who has a lot of time on their hands because this recipe took me a while!

Okay, so I had a MASSIVE pork loin. It couldn’t even fit in a pan to brown it, but I still succeeded… barely. I would say use this recipe with a smaller loin and save yourself some time and dirty pots. With that being said, I would definitely use more seasoning than the recipe called for, plus onion powder, paprika and sub regular salt for garlic salt. For this recipe, you can use beef stock or chicken stock + beef bouillon- tastes about the same. OH, also season the onions with garlic salt and pepper.

Tuscan Chicken

Okay… this recipe turned out SO GOOD! Actually, so good my dad approved of it! And that rarely happens! It had the perfect amount of acidity and the flavor was perfect! I would highly recommend this recipe! Also, this recipe would taste great with white fish, such as halibut, if you’re not into chicken!

For this recipe, I used chicken thighs because that is what I prefer and they are faster to cook. I have a love for garlic, so naturally I used 5 garlic cloves instead of 3 and used garlic salt instead of regular salt. Also, don’t worry about using dried basil, oregano and rosemary. I just used Italian seasoning and it still turned out perfect! I put the sauce and chicken over pasta, but would it great with rice or just by itself!

Optional addition: Red chili flakes for spice and mushrooms, if you’re into that sort of thing.

Brownies… but make it Sourdough!

I haven’t met someone who doesn’t love brownies. With the pandemic that hit at the beginning of last year, a lot of people hopped on the sourdough train. I know I did! So, this is where we are. This recipe is by far produced the best fudgy, rich and decadent brownie that’ll fill you up with one square, but have you craving more. I literally crave these all the time!

Now for this recipe, it calls for vegetable oil but these ones have canola oil in them since I thought we had veggie oil, but we didn’t. SO, I improvised. With the canola oil, I found that the top of the brownies came out softer and more box-like whereas the veggie oil creates a crispy top. Either are just as good! I also decided to throw some espresso powder (about a teaspoon) to help bring out the chocolate flavor and I would say it really worked!

The Italian Biscotti

The dreaded biscotti. I am INCREDIBLY intimated by making biscotti, but I decided that it was time to try. New year, new recipes right? I chose this recipe since they look BOMB and it had no reviews, so I thought that “why go with a mainstream recipe and not try something out of my comfort zone and go into the unknow”. If I happened to “pop off”, it would give credit to this wonderful cook as well which is what this blog is all about.

I used a recipe from Homemade Italian Cooking with Cara (linked above). I ended up subbing the pecans with more almonds since I don’t particularly care for pecans, but by all means use them if you like ’em. The recipe turned out to be a perfect texture with crispy edges and a semi soft center. You could play with the second bake and make them crispier if you like it that way. Unlike some biscotti’s that are as hard as a brick, these are perfect for eating as a snack and they hold up being dunked in coffee! For a few of the biscotti, I coated the bottoms in semisweet chocolate for added flavor, YUM!
